Prosperity in Bloom Leaf Fish
Prosperity in Bloom Leaf Fish is a famous dish from Dandong, primarily made with grass carp from the upper reaches of the Yalu River. It is prepared with auxiliary ingredients such as bok choy, tomatoes, carrots, and seasoned with delicacies like scallops.
First, a live grass carp is slaughtered and its meat is extracted to make fish paste. Seasonings and supplementary ingredients are added, and the paste is shaped into leaves. It is then lightly fried until cooked, followed by a quick stir-fry seasoning process, and arranged on a plate.
Features: Shaped like leaves, the dish has a bright color and a smooth, tender, and delicious taste.
Dandong boasts abundant freshwater resources, with 23,772 hectares of aquaculture water area. In particular, the 795-kilometer-long Yalu River is rich in premium wild freshwater fish such as amur carp, variegated carp, ide, Chinese high-fin banded shark, and catfish. Sea fish are fresh, river fish are fragrant, and Yalu River fish are both. Even the common carp, grass carp, and silver carp from the Yalu River taste far better than those from reservoirs or other rivers. Jiang Zhenbao, a chef at Andingge Hotel, after years of research and development and drawing on culinary techniques from both northern and southern China, used freshwater fish from the Yalu River to create this new-flavored dish — “Prosperity in Bloom Leaf Fish.” This reflects the new development of Dandong’s catering culture. Jiang Zhenbao was also one of the “Top Ten Chefs” at the second Dandong Culinary Skills Competition.
