Beizhen Pig Trotters
"Smoked pig trotters" have a long history, with their production dating back to the Daoguang era of the Qing Dynasty (1824–1850).
At that time, in Beizhen town, there was a small meat shop run by three generations of the Yang family — the father's name is unknown, but his eldest son was named Yang Junqing and the second son Yang Hanqing. They were meticulous in making smoked pig trotters and used just the right seasonings. In addition to using old broth, sesame oil, refined salt, star anise, Sichuan peppercorn, and ginger, they also coated the trotters with white sugar during smoking, giving them excellent color and flavor and making them widely renowned.
"Smoked pig trotters" have a unique flavor, are exquisitely crafted, and rich in various nutrients such as minerals and collagen protein. They are a traditional local specialty food known nationwide. They have been awarded titles such as Quality Product by the former Ministry of Commerce and the People’s Government of Liaoning Province, Emblem Product of the 1992 China Friendly Sightseeing Year Organizing Committee, Excellent Product by the Liaoning Provincial Food Industry Association, Gold Cup Prize at the 1985 Industrial New Product Development Achievements Exhibition and Evaluation Organizing Committee, Merit Award at the 1985 Agricultural Spark Science and Technology Achievement Expo, Gold Award at the International Expo of Famous and Quality Products from China and Abroad, and Famous Brand Product by the People’s Government of Liaoning Province.
