Spicy Stir-Fried Mustard Stems
Spicy Stir-Fried Mustard Stems
Ingredients: several mustard stems, 1 red chili and 1 green chili.
Seasonings: 1 tablespoon each of chili sauce, salt, sugar, vinegar, spicy meat sauce, and MSG, plus a small amount of julienned ginger.
Method:
1. Soak the mustard stems in clean water, rinse them by changing the water. Then mix with salt and marinate for 15 minutes. Finally, rub and wash them, then cut into long, thin strips.
2. Wash the green and red chilies, remove stems and seeds, slice into strips; also julienne the ginger. Sprinkle all over the marinated mustard stems.
3. Then mix all the seasonings together. Key Points: Mustard stems are the roots of a type of mountain herb from Northeast China, resembling small ginseng. When using them, wash thoroughly and change the water several times to remove their bitterness. If possible, soak them longer. You may also taste them first to ensure there's no bitterness before cooking.
