When it comes to specialty coffee-producing countries in Central America, Honduras is worth considering. The highland coffee and premium highland coffee they produce are of good quality and highly praised by coffee enthusiasts around the world. Today, let’s introduce Twin Flowers Estate, a producer of highland coffee, whose naturally processed Red Catuai boasts intense aromas of wine, grapes, berries, and brown sugar.

The Copán growing region is located between Copan, Ocotepeque, and Lempira areas. It showcases strong chocolate flavors, characterized by the sweetness of honey and caramel, with relatively mild fruit notes. The coffee is grown at altitudes of 1,000 – 1,500 meters, with the harvest season from November to March.
Nery Subiaba Oliana Aguilar, the owner of Twin Flowers Estate, inherited the farm from her father and family. The estate carries a strong personal touch of a coffee enthusiast. The name "Twin Flowers" (Las Gemelas) was given by Nery in honor of the birth of her twin daughters. To ensure the quality of their coffee, Twin Flowers Estate sends its beans to ARUCO ENTERPRISE for cupping and quality control every year.
Nery also broke away from the traditional washed processing method used by her family and innovatively experimented with natural processing, even using it to enter competitions. Two experimental batches were entered — one fermented for 72 hours before drying and the other for 90 hours before drying. The award-winning coffee beans came from the batch with 72-hour long fermentation.
