Ningxia Baijiu
Baijiu is defined as a type of distilled spirit made from starchy (or sugary) raw materials, which undergo steaming, saccharification, fermentation, distillation, aging, and blending, using koji or yeast as saccharifying and fermenting agents.
A uniquely Chinese distilled spirit. It is produced by distilling fermented mash or mash made from starchy or sugary raw materials. Also known as shaojiu, laobaigan, or shaodaozi. The liquor is colorless (or slightly yellow) and transparent, with a fragrant and pure aroma, a smooth, sweet, and clean taste, and a high alcohol content. After storage and maturation, it develops a complex flavor dominated by esters.
