This fish is considered valuable not only because of its excellent flesh quality but also due to its highly demanding breeding conditions—it must be raised in low-turbidity flowing water (continuous running water). In December 1988, the Liupan Mountain State-owned Forestry Bureau built a 400-square-meter fish pond by the Erlong River, introducing 10,000 rainbow trout fry from Heilongjiang. The fish grew well and reproduced vigorously, and since then, rainbow trout have made their happy home here. The fish is covered with black spots that faintly shimmer red. It has an elongated body, no bones, and is delicious when cooked, making it a premium delicacy often served at banquets. Its nutritional value is no less than that of sea cucumber, bird’s nest, or bear’s paw. (Yinchuan)
