Zhenyuan Sugar Fried Pancakes
When you stroll along the streets of Zhenyuan, you’ll often see stacks of pancakes neatly arranged in rectangular wooden trays at food stalls. These pancakes are dark red in color, with thin, crispy crusts and a sweet, delicious taste. The dough for sugar fried pancakes is carefully prepared by mixing equal parts fermented dough, raw dough, and cooked dough, along with an appropriate amount of honey, brown sugar, eggs, cooked oil, and alkaline flour. All the ingredients are mixed and kneaded thoroughly, left to rise slightly, then kneaded again. The dough is then divided into fist-sized pieces, rounded, covered, and individually rolled into small pancakes. One or two slits are cut in the center with a kitchen knife before frying in hot oil. The cooking process is also very particular: once the oil is boiling, the rolled pancakes are placed in the pan. Once they float to the surface, they are flipped and then slowly fried over low heat until done.
