Egg Thread Pancake
A renowned halal delicacy from Xi’an, exclusively produced and sold by the “Yongxin Yi” Halal Food Store on the south side of the Drum Tower. It enjoys an outstanding reputation among the Hui community. The name comes from the fine, shiny threads made of eggs that are tightly wound around the cake, resembling yellow silk threads.
Preparation method: The outer dough is made with premium wheat flour, eggs, maltose, and peanut oil. The filling is made from red dates, rose preserves, walnut kernels, dried orange peel, white sugar, and cooked wheat flour to form a date paste filling. The process includes making the dough, preparing the filling, making the egg threads, forming the cake, deep-frying, glazing, and wrapping the threads. The preparation of the egg threads is particularly crucial. Fresh eggs are beaten evenly, strained through a sieve, and then fried in warm oil. The freshly fried egg threads are quite crisp and need to be softened before use. After the dough and filling are wrapped into a flat round cake, it is first deep-fried, then dipped into a syrup made from white sugar and honey to coat it, and finally wrapped with the egg threads to complete the dish.
Features: Beautifully shaped, with a fine and compact texture. It has a crispy, soft, tender, and sweet taste upon eating. It leaves a rich, mellow fragrance in the mouth, is oily but not greasy, and carries a strong eggy aroma. Rich in starch, protein
and fat, it is suitable as a dessert.
