Crystalline Persimmons
Crystalline Persimmons
Crystalline persimmons, a renowned specialty of Xi’an City, Shaanxi Province, originate from Lintong and are sometimes written as Huodi Persimmons. They earn their name from their fiery red hue and glossy, crystal-like skin. By late autumn, the persimmons ripen into a soft, pulpy texture, with their flame-red exteriors adorning the branches in vibrant clusters—earning them the alternate name “Flame-View Persimmons.” The fruit is flat and round, relatively small in size, with a vivid crimson color, thin skin, no seeds, and a crystal-clear appearance. Its flesh is high in sugar content, cool and sweet on the palate, sugary yet not cloying, and the skin peels off effortlessly. Crystalline persimmon cakes made from Lintong’s crystalline persimmons are soft, sweet, and a famous snack in Xi’an.
