Premium Assorted Beans

　　Northern Shaanxi produces a wide variety of beans, which are colorful, plump, high in quality, and rich in nutrients. These beans are an important local export product. The city’s annual bean cultivation area covers 40,000 hectares, with an output of several hundred thousand tons. Major varieties include red adzuki beans, double-green beans, mung beans, cowpeas, peas, kidney beans, and lentils. Take double-green beans, for example — they are emerald green, as vibrant as jade, rich in protein (over 40%) and various vitamins and trace elements. They are highly versatile, serving both medicinal and culinary purposes. They can be boiled and eaten directly, sprouted, or processed into bean-based side dishes. They are one of Yan’an’s main agricultural export products for earning foreign exchange, and are exported to more than ten countries and regions including the United States, Canada, and the Netherlands.
