Northern Shaanxi Potatoes
Northern Shaanxi potatoes are excellent, renowned throughout the land of Shaanxi. Northern Shaanxi is famously known as the "Potato Homeland," with every county and city producing potatoes, yielding about 2 billion kilograms annually. The southern part of Yulin region, especially the six counties of Jia County, Qingjian, Suide, Zizhou, Hengshan, and Jingbian, produces the most, with superior quality that is famous nationwide. The annual production in this entire region exceeds 1 billion kilograms. In addition, counties such as Zichang in the Yan'an region also produce a large quantity, cultivating over 90,000 mu annually with an output of more than 100 million kilograms. The main varieties planted are red-skinned and white-skinned potatoes. Thanks to their strong disease resistance, high yield, smooth skin, elegant color, large size, rich flesh, fine texture, and abundant nutrition — including higher starch content (about 2% more than other regions) — they are durable for storage and transport, of premium quality, and suitable for both consumption and processing. These varieties rank among the best in China and are highly sought-after premium seed potatoes welcomed by potato-growing areas.
Northern Shaanxi is located on the Loess Plateau in northwest China, characterized by a warm to mid-temperate, arid grassland climate, with an average annual temperature of 10°C, annual precipitation of 450 mm, and 2,600 hours of sunshine per year. The area experiences large diurnal temperature variations and high photosynthetic efficiency. With a frost-free period of about 150 days and loose, deep loess soil, these conditions provide favorable environments for the healthy growth and high-yield, high-quality production of potatoes. Northern Shaanxi potatoes are large, fluffy, flavorful, and nutritionally comprehensive. Their tubers contain about 22%–26% starch, 3% protein, 0.1%–1% fat, and 160 mg of vitamin C per kilogram, along with calcium, phosphorus, iron, potassium, vitamins B1, B2, B9, and carotene, offering 660–1,130 kcal of energy. The mineral content is 1–2 times higher than that of common cereal grains. Consuming just 0.5 kg of potatoes a day can provide sufficient amino acids, minerals, and vitamins.
Industrially, potatoes have even broader uses. They can be processed into dozens of industrial products such as starch, alcohol, synthetic rubber, photographic film, rayon, perfume, glucose, dextrin, and syrup, earning them the title of "all-purpose crop." Potatoes are also medicinal. Since ancient times, they have been used to treat gastrointestinal discomfort, feverish coughs, and other ailments. Eating them has the effects of harmonizing the stomach, regulating the middle energizer, and benefiting qi. They show significant therapeutic effects on gastric ulcers, habitual constipation, and skin eczema. Applying mashed raw potatoes externally can treat eczema, mumps, and scalds or burns; fresh potato juice, when consumed, can alleviate duodenal ulcer pain, chronic stomachache, habitual constipation, and has emetic and detoxifying effects. Potatoes are also considered a "weight-loss food" with health-promoting properties.
