Wujiang Potatoes
Wujiang Potatoes are a specialty of Wujiang County in Yulin City, Shaanxi Province. The potatoes are large, uniform in size, high in dry matter content, smooth-skinned, and have excellent commercial traits, making them highly favored by merchants and exported to southern provinces and cities such as Guangdong and Shanghai.
Locally known as “shānwàn” or “shānyào,” potatoes are one of the staple side dishes for the people of Wujiang County. With an annual planting area of 43,000 mu and a yield of over 36,000 tons, 70% are consumed as food and 30% are processed into vermicelli. Potatoes can be prepared in various forms—sliced, cubed, or shredded—and cooked in many ways such as stir-fried, steamed, or braised, which makes them very popular among locals.
