Qingjian Vermicelli
The processing of Qingjian vermicelli boasts a long history and a well-established reputation. Known for its authentic flavor, crystal-clear appearance, smooth texture, and diverse cooking methods, it is widely sold in over ten provinces and cities including Xi'an, Shanxi, Ningxia, and Gansu. Vermicelli is closely tied to the lives of the people in Qingjian, forming an inseparable bond. In recent years, the vermicelli processing industry has become one of the leading industries in the county, with an annual production of 30,000 tons of vermicelli products, generating an output value of 120 million yuan. The vermicelli industry plays an irreplaceable role in promoting the rapid economic development of the county and is affectionately hailed by the locals as one of the "Three Auspicious Treasures" (along with red dates and slate).
The food culture surrounding Qingjian vermicelli is rich. During the winter off-season each year, most households in Qingjian County select the best potatoes to grind into starch slurry, which is then processed into vermicelli of various shapes—round or flat, thick or thin. Throughout the villages, rows upon rows of silvery vermicelli are hung out to dry, weaving a snow-white world that forms a unique winter scene in the rural areas of Qingjian. Every household in Qingjian makes and loves vermicelli. Stir-frying, stewing, steaming, or braising with vermicelli are all specialties of the locals, giving rise to numerous stir-fried dishes and snacks made with vermicelli, such as shredded pork with vermicelli, pork and vermicelli stew, and cold tossed vermicelli, to name just a few. Popular snacks include three-deliciousness vermicelli hotpot, fried oily vermicelli dumplings, and leek-stuffed vermicelli pockets—all beloved delicacies. Coupled with the advantages of being easy to store, crystal-clear, and smooth on the palate, Qingjian vermicelli is favored by consumers, which is also why it is so well-known and highly regarded. As such, Qingjian vermicelli has become the top choice for festive celebrations, entertaining guests, and gifting to relatives and friends. It is also the “signature gift” for welcoming distinguished visitors in Qingjian.
As one of the leading industries in Qingjian, the vermicelli processing industry plays a pivotal role in the county's economic development. In recent years, the vermicelli processing industry in Qingjian has flourished, with six vermicelli processing enterprises and over 3,000 workshops in the county. The annual potato processing capacity reaches 140,000 tons, generating an output value of 120 million yuan. The Hongqi Valley Vermicelli Processing Corridor, formed by seven administrative villages centered around Hejiachuan, located 15 kilometers southwest of the county seat, constitutes a massive vermicelli processing base, producing 20,000 tons of vermicelli and noodles annually. Over 10,000 people are engaged in vermicelli processing and marketing. This year, the county has further increased support for the vermicelli processing industry, giving it a “green light” for development. Projects such as the construction of a new 2,400-ton vermicelli product production line and the renovation of a 1,200-ton refined vermicelli and noodle production line have been included as key projects under the municipal South Support Program, securing project funding of 2.1 million yuan. These efforts have laid a solid foundation for the rapid development of the vermicelli industry.
