Qianyang Zenggao
Qianyang Zenggao
The making of zenggao is highly particular, requiring careful selection of ingredients, the order in which they are added, and precise timing. After steaming for a certain period, the zenggao is mainly simmered. This usually takes several hours so that the sweetness of the beans and dates can fully permeate the rice, resulting in a great texture. Ingredient selection is crucial—the dates should be the large dates from northern Shaanxi, preferably honey dates, the beans should be red adzuki beans, and the rice should be glutinous. The proportions of these three must be carefully balanced.
Though it may seem like a common street snack widely sold in Qianyang at a low price, the preparation process is actually quite complex. It is recommended that you take the time to visit Qianyang and try the authentic zenggao.
