Shepherd's Purse Dumplings
Shepherd's Purse Dumplings
Select fresh shepherd’s purse, wash and clean it, blanch in boiling water, then remove and squeeze out excess moisture to set aside. Also prepare an appropriate amount of Chinese chives, finely chopped. Mince the meat filling, mix it with scallions, ginger, and Sichuan peppercorns until it becomes elastic, then add soy sauce, pepper, chicken essence, and stir well. Add an appropriate amount of salt, sesame oil, and five-spice powder, and mix evenly to form the filling. The rest of the process is the same as that for regular dumplings. Shepherd’s purse dumplings have a fragrant and refreshing taste and are a traditional snack of the people in Xixiang.
