Weishan Pickles
Weishan pickles are widely renowned for their fragrant, sweet, crisp, and tender texture, as well as their vibrant color. There is a rich variety of types, including wheat orchid pickled vegetables, pickled radish, fermented tofu, broad bean paste, fermented soybeans, fermented garlic stems, pickled cucumbers, sweet topping, spicy fermented vegetables, and pickled lettuce stems, among which wheat orchid pickled vegetables and fermented soybeans are especially distinctive. Wheat orchid pickled vegetables are made mainly from wild mountain-grown wheat orchid, combined with shredded carrots and seasonings, then kneaded into shape. They are a pollution-free, colorful food product, featuring a flavor that is both sour and sweet, crisp and tender on the palate, with a natural aroma of wheat orchid that whets the appetite. Fermented soybeans are made from mountain-grown black beans, which are washed, steamed, fermented, seasoned, and then sealed in clay pots. They are a black food product free from industrial pollution. The finished product is pure black and glossy, with a delicious taste—salty with a hint of sweetness and a unique fragrance. They can be eaten raw, fried, stir-fried, or steamed. These products sell well across northwestern Yunnan and are in high demand.
