Eel rice noodles are a signature dish among Yuxi’s local snacks. The main ingredient is fresh eel, complemented by a variety of sides and seasonings. The cooking process begins by heating a pan and adding an appropriate amount of vegetable oil based on the serving size. When the oil reaches the right temperature, fry minced garlic until golden brown, then stir in a suitable amount of fermented flour paste to release its aroma, followed by a dash of chili powder. Next, add three-centimeter segments of cleaned eel to the pan and stir-fry until they change color. Then add an appropriate amount of salt, MSG, Sichuan peppercorn powder, and soy sauce, followed by cold water to just cover the eel. Once the broth comes to a boil for a short while, scoop out the eel using a strainer. Add pre-fried, rehydrated pork skin to the broth and simmer briefly to let it absorb the flavors. Then return the cooked eel segments to the pot, mix everything together, and bring it to a final boil before removing from heat. Next, blanch the rice noodles, combine them with the hot eel and broth, add your preferred seasonings, and the dish is ready to eat. Eel rice noodles can also be served cold, offering a delightful medley of sour, sweet, numbing, spicy, fragrant, delicious, and refreshing flavors. According to folklore, there's a story behind the origin of eel rice noodles: One year, a poor family welcomed a child in their later years, just in time for the Rice Noodles Festival, when relatives and friends came to offer congratulations. However, the family hadn’t eaten meat in half a year and had no “topping” for the rice noodles. In desperation, the elderly family member caught eels to make a “topping” for the guests. To everyone’s surprise, as soon as the rice noodles were served, the aroma filled the air. Guests praised the dish highly and kept asking what kind of rice noodles they were. The host casually replied, “Eel rice noodles.” From then on, eel rice noodles gradually gained popularity. Over time, the recipe was refined and improved to become even more delicious. (Yuxi)
