Stuffed Buckwheat Pancake
To make a stuffed buckwheat pancake, first prepare a dough of bitter buckwheat flour and bake it into a flatbread on a pan. Then prepare the filling. The filling can be made from common vegetables, or depending on availability, fish, chicken, pork, or game meat. However, the Derung people particularly enjoy adding some wild leeks to give the pancake a unique flavor. These stuffed buckwheat pancakes are convenient to carry, and people often take a few with them before going out to work or hunt. When they get hungry, they light a fire wherever they are, roast the pancakes over the flames, and then eat them with homemade alcohol or mountain spring water. In no time, they gobble down several pancakes, instantly replenishing their energy for the tasks ahead.
