White tea is a lightly fermented tea and a traditional famous tea created by Chinese tea farmers. It is one of the six major types of tea in China. It refers to a type of tea that, after picking, is not subjected to fixation or rolling but is processed only through sun-drying or low-heat drying. It features intact buds covered with fine hairs, a fresh and delicate aroma, a clear yellow-green liquor, and a light, refreshing taste with a sweet aftertaste. As a slightly fermented tea, it is a special treasure among Chinese teas. It gets its name because the finished tea mostly consists of buds covered with white fuzz, appearing silvery or snow-like. The main production areas are in Fujian’s Fuding, Zhenghe, Songxi, Jianyang, and Yunnan’s Jinggu, among others. The basic processing steps include withering, baking (or air-drying), sorting, and refiring. The Yunnan white tea process mainly involves sun withering, and the advantage of sun-withered tea is that it retains the tea’s original fresh and fragrant taste. Withering is the key process in forming the quality of white tea.
