Dried Beef Jerky (Chong Ganba)
Dried Beef Jerky (Chong Ganba)
Dried Beef Jerky (Chong Ganba) is one of the three most famous dishes of the Dai ethnic group, and was said to have been exclusively enjoyed by nobility and tribal leaders in the past. The dish uses premium yellow beef with rich marbling, uniquely found in Dehong. The meat is carefully selected for its tenderness and fiber-free texture, roasted over charcoal, then hand-pulled into fine strips. It is then deep-fried and pounded together with natural spices such as lemon, vanilla, and bird’s eye chili in a wooden barrel using a wooden mallet. Alternatively, it can be directly mixed with seasonings and served cold as a spicy shredded beef salad.
The Dai-style preparation of dried beef jerky is unique and boasts a strong ethnic flavor. It is now also available on the market as ready-to-eat snack food.
