Sinan Mung Bean Noodles are a specialty snack from Sinan County, Tongren City, Guizhou Province. Sinan Mung Bean Noodles are a traditional specialty food in Sinan and are considered a fine dish for festivals or to entertain distinguished guests. With a rich and mellow flavor and a lingering fragrance, they enjoy a high reputation in Guizhou. Made using traditional handmade methods in local Sinan food workshops.

The production process is as follows: soak non-glutinous rice and mung beans in an 80% to 20% ratio respectively, rinse the rice clean, rub off the bean skins, then grind them into a paste using a stone mill. Then, set up a firewood stove, heat and dry a large iron wok, brush it with vegetable oil, pour an appropriate amount of the rice-mung bean paste evenly onto the wok, and spread it into a thin layer using a wooden spatula or ladle. Cover with a lid, and once the heat is right, flip it over to steam until cooked. In two to three minutes, a round mung bean noodle sheet shaped like the wok is ready. It is then hung on a bamboo pole to cool before being cut into strips, which can be boiled or stir-fried. Because the production of mung bean noodles requires precise control of heat—neither too strong nor too weak—and must be done in a large iron wok using firewood to produce its authentic aroma, it can only be made using traditional handcrafting techniques and cannot be mass-produced by machines. This helps preserve the genuine flavors and original taste of this folk food.

Sinan Mung Bean Noodles have a rich and mellow taste and a lingering fragrance, and they help clear heat and relieve summer heat, making them especially popular among locals in the relatively hot climate of Sinan. They have a delicious and fragrant taste. Eating a bowl of mung bean noodles on a hot day will make you feel refreshed and cool, with the summer heat instantly dissipating. When eating, boil fresh mung bean noodles in boiling water for about half a minute, then scoop them into a bowl and add seasonings. The seasonings for mung bean noodles are also quite particular, including minced ginger, chopped scallions, Sichuan peppercorn oil, fermented soybean paste, prickly ash oil, lard, or matsutake oil.
