Osmanthus-flavored Preserved Pork from Kai Kou
Osmanthus-flavored Preserved Pork from Kai Kou is made from high-quality pork raised on natural feed by local farmers, and is one of the signature products of the Kai Kou Osmanthus Flavored Preserved Meat Workshop in Duyun City. It is highly popular among consumers, with annual production often unable to meet demand. Production begins right after the Winter Solstice each year. The preserved meat is smoked over a long period, allowing it to be stored for a long time without spoiling—lasting all the way until the following Start of Winter. Though not particularly attractive in appearance, osmanthus-flavored preserved pork tastes excellent. When you chew it, your mouth waters and the fragrance lingers on your palate. Steamed preserved pork and sausages can be torn off piece by piece or strand by strand. Cleaned fatty preserved pork becomes crystal clear and transparent; when placed in sunlight, you can even see your reflection in it—it’s rich but not greasy. On New Year’s Eve, when the whole family gathers for the reunion dinner, a dish of preserved pork is an essential must-have.
