Min River fish
The Min River boasts clear waters and fine sand, with minimal pollution, and has been renowned for its abundant supply of fresh fish since ancient times. Among them, the Jiangtuan (known in formal terms as the long-snout catfish) is considered the finest of all freshwater river fish. The Jiangtuan has no scales, few small bones, a plump round body, and tender, richly flavored meat—making it perfect for steaming. Often selected as a dish for state banquets, this premium fish is not only expensive but also requires a bit of luck to enjoy.
