The premium flour is made into a semi-scalded dough, which is cooled and then mixed with an appropriate amount of baking soda and leavened dough to form the wrapper; another portion of premium flour is made into a crisp dough with added salt and Sichuan peppercorn powder. The wrapper is filled with the crisp dough, shaped into a crisp pastry, divided into pieces, wrapped into round shapes, coated with white sesame seeds, and baked in the oven. A small slit is cut along the edge of the pastry, the inner crisp filling is removed, and it is then plated for serving.
Key points: Do not bake for too long to prevent the top from bursting.
