Spicy Shrimp
Spicy Shrimp
Spicy Shrimp Ingredients: live shrimp (about 1.2 jin / 600g), potatoes, winter bamboo shoots, celery, and green onions.
Seasonings: crab sauce, crab oil, MSG, chicken essence, sugar, and dried chili peppers.
Preparation:
Step 1: Peel and cube the potatoes, cube the winter bamboo shoots, slice the celery, and cut the green onions into sections—just a small amount of each—and set aside for later use.
Step 2: Clean the live shrimp thoroughly, then make a shallow slit along the back of each shrimp to help the flavors penetrate during cooking.
Step 3: Heat a wok, add an appropriate amount of crab oil, then toss in a small amount of dried chili pepper slices and stir-fry briefly. Add the shrimp, potato cubes, winter bamboo shoot cubes, celery slices, and green onion sections into the wok, and stir-fry everything together.
Step 4: After stir-frying for a while and when the ingredients are nearly cooked, add the crab sauce, followed by a little MSG, chicken essence, and sugar, then continue stirring-frying.
Step 5: Cook until the shrimp curls up and turns orange-red in color, indicating that it is just cooked through, then remove from the wok.
This dish has a rich, savory sauce with a deliciously fresh and mildly spicy flavor. The shrimp meat is tender and succulent.
