Gold Coin Pastry
Gold Coin Pastry, a type of crisp pastry, features: golden color, an ancient coin-like shape, four distinct flavors, and a unique style. Cooking method: deep-fried.
Four fillings are made separately using peanuts, sesame paste, assorted dried fruits, and red bean paste.
A small amount of food-grade yellow coloring is added to the oil-water dough, which is then kneaded evenly, wrapped around the oil-based dough, rolled into a cylinder, and sliced into 3-gram round pieces. Each piece is filled with one of the four fillings, folded in half into a semicircle. Four different flavored semicircles are assembled securely at the edges, their borders crimped into decorative patterns, then deep-fried in lard until golden.
Key tips: Ensure secure connections at the seams; the decorative crimping should be intact, and the final shape should hold well during frying.
