Stir-fried Dried Tofu

  Ingredients:

1. Sichuan-flavored dried tofu available in supermarkets; if unavailable, regular smoked dried tofu can be used as a substitute, about 300 grams.

2. 100 grams of green or red Hangzhou chili peppers (bird’s eye chilies are also fine), a few slices of ginger, garlic, and a little chopped scallion.

Steps:

1. Slice the dried tofu thinly and cut the green Hangzhou chili peppers into strips.

2. Heat oil in a pan; once hot, briefly fry the dried tofu (this makes it soft and tender), then remove it.

3. Leave some oil in the pan, add the ginger slices, garlic slices, and chopped scallion, stir-fry until fragrant, then add the green chili peppers and stir briefly.

4. Add soy sauce, oyster sauce, and a small amount of sugar, then thicken slightly with a bit of cornstarch slurry (this keeps the tofu moist).

5. Stir briefly and it’s ready to serve.

Texture:

Salty and savory, the tofu is soft and tender with a rich bean flavor, and is highly nutritious.
