Guilin Snail Dish
The main ingredient is a type of freshwater snail found in local rice paddies, known for its large size, plump meat, and delicious flavor. The dish is first stir-fried with Guilin’s specially made sour chili peppers, along with scallions, ginger, and Sanhua wine. It is then simmered with spicy pork bone broth and perilla leaves, resulting in a tangy, spicy, and savory taste that is especially appetizing. When cooking, the tip of the snail shell must be removed to allow the seasoning to penetrate and make it easier to suck out the meat. When eating, both the broth and the meat are sucked directly from the shell, hence the name “drinking snails.” (Guilin)
