The ingredients come from the vast rural areas of Guangxi. This rustic-style fare, made from local ingredients, is a popular home-cooked dish widely enjoyed among the people. Our restaurant collects, organizes, and develops these ingredients to create a unique “rustic-style” countryside specialty dish based on Northern Guangxi cuisine, which has gradually become a bestseller.

Spicy, numbing, rich in flavor, with a thick and savory sauce.

  Preparation Method:

  1. Boil a small amount of water in a pot, blanch enoki mushrooms and wood ear mushrooms briefly, then add beef tripe slices, eel pieces, and pig’s blood in separate batches.

  2. Discard the water in the pot, then add pork bone broth (or plain water) along with spicy hotpot base and chicken bouillon. Cook until the base dissolves.

  3. First add potato slices and cook for about 2 minutes, then add enoki mushrooms and wood ear mushrooms for another 2 minutes. Next, add eel pieces, beef tripe, ham, and soybean sprouts. Finally, add pig’s blood and bring the soup to a boil again.

  4. Transfer the cooked ingredients and soup into a serving bowl.

  5. Heat oil in a pan (do not skimp on oil) until 70% hot, then add Sichuan peppercorns, ginger, dried chili peppers, star anise, and cinnamon. Stir over low heat until they turn yellow, then remove the star anise and cinnamon.

  6. Pour the hot oil along with the dried chili peppers, ginger, and garlic over the ingredients in the bowl.

  Nutritional Benefits:

  1. Soybean Sprouts: Rich in vitamins, eating soybean sprouts in spring can effectively prevent vitamin B2 deficiency. The vitamin E in sprouts helps protect the skin and capillaries, prevent arteriosclerosis, and manage hypertension in the elderly. Additionally, because soybean sprouts contain vitamin C, they are good for the skin. Regular consumption nourishes hair, keeping it black and shiny, and helps fade facial freckles. Eating soybean sprouts benefits adolescents’ growth and development, helps prevent anemia, strengthens the brain, combats fatigue, fights cancer, prevents gum bleeding, cardiovascular sclerosis, and lowers cholesterol.

  2. Eel: Eel is rich in DHA and lecithin, which are main components of cell membranes in human organs and tissues, and essential nutrients for brain cells. Eel uniquely contains “eel element,” which helps lower and regulate blood sugar, and has very little fat, making it an ideal food for diabetics. Eel is also rich in vitamin A, which improves vision and promotes skin membrane metabolism. Eel has benefits such as replenishing qi and blood, nourishing blood and consolidating collapse, warming yang and invigorating spleen, nourishing liver and kidney, dispelling wind and unblocking collaterals. It is suitable for treating internal hemorrhoid bleeding, qi-deficiency prolapse of anus, postpartum weakness, women’s overwork injuries, kidney-deficiency back pain, limb weakness, rheumatic paralysis, facial paralysis, and more.

  3. Ham Sausage: Ham sausage provides protein, fat, carbohydrates, various minerals, and vitamins needed by the human body. It also has advantages such as high absorption rate, good palatability, and strong satiety, and is suitable for making a variety of dishes. Ham sausages contain additives such as sodium nitrite, so they should not be consumed in excess.

  4. Wood Ear Mushrooms (Soaked): Black fungus is extremely rich in iron, so regular consumption can nourish blood and maintain a youthful complexion, leaving skin rosy and radiant. It also helps prevent iron-deficiency anemia. Black fungus contains vitamin K, which reduces blood clots and helps prevent thrombosis, playing a role in preventing arteriosclerosis and coronary heart disease. The gelatinous substance in wood ear mushrooms can adsorb and gather dust and impurities left in the digestive system and expel them, thus cleansing the stomach and intestines. It also has a notable effect on dissolving internal foreign bodies such as gallstones and kidney stones. Black fungus contains anti-tumor active substances that enhance immunity, and regular consumption can help prevent and fight cancer.

  5. Duck Blood has blood-nourishing and heat-clearing detoxifying effects, and helps prevent and treat iron-deficiency anemia.
