Luzhai Rice Noodles

Luzhai rice noodles can be divided into two types based on their appearance: one is called "sliced noodles" (known as "flat noodles" in Nanning), and the other is called "round noodles." The sliced noodles are handmade by street vendors, made by steaming dough into sheets and then cutting them into strips with a knife. The resulting noodles vary in size—some thick, some thin, some wide, some narrow—and have a smooth and delicate texture; the other type is round noodles, which are extruded by machine and then air-dried. They are small and round in shape, about one-quarter the size of Guilin rice noodles. In Luzhai, sliced noodles are the main variety, while round noodles are less common. In terms of preparation, the noodles come in two styles: cold tossed noodles (called "dry scoop noodles" in Nanning) and soup noodles. The meat and vegetable toppings for the noodles include char siu, grilled sausage (pork marinated with spices, stuffed into pig intestines, and then deep-fried), and pork belly.
