Stone Fish

Stone Fish is a specialty dish served by the people of the Greater Miao Mountains to welcome guests. It has a tender and delicious taste that stimulates the appetite.

  Main ingredients:

Field carp or fresh river fish. Side ingredients: Dried chili peppers, shredded ginger, white perilla, and wild drought-tolerant vegetables (commonly known as Yao Po vegetables).

  Cooking process:

Roast the rice-field carp well, prepare wild vegetables, chives, chili peppers, and side ingredients. Place the main ingredients and side ingredients in a soup bowl, pour in clear water, then select several hard river stones and heat them until red-hot in the charcoal fire. Put the “red stones” into the soup bowl. The heat from the stones boils the soup for three to five minutes, cooking the fish. Then add a little salt and MSG to create this extremely delicious traditional Miao ethnic dish—Wild Vegetable Stone Fish. The fish tastes sweet and the broth is richly flavorful. Wild Vegetable Stone Fish is a dish created by the Miao people in their daily lives, filled with a sense of wonder.

This dish is not something everyone can come across or be served at any time. It is a special dish the Miao people prepare to entertain honored guests during certain seasons. But if you visit with sincerity, on a crisp autumn day, bringing your family and friends into the Miao mountains, the Miao people will fulfill your wish while harvesting glutinous rice.
