Bamboo tube rice, also known as fragrant bamboo rice, is a dish where rice and seasonings are roasted inside a fresh bamboo tube. It is often prepared in mountainous wilderness areas or made at home using charcoal. The rice is typically made from “fragrant rice” derived from mountain glutinous rice (a type of upland rice), combined with meat, and placed inside bamboo tubes cut from fresh fragrant or mountain bamboo. After adding an appropriate amount of water, the bamboo tube opening is tightly sealed with banana leaves, and the green bamboo is roasted over charcoal until it turns charred. The cooking method of bamboo tube rice has strong picnic-like characteristics—simply cut a section of bamboo, fill it with the right amount of mountain glutinous rice and water, and roast it over a fire. When it’s time to eat, break open the bamboo tube to retrieve the rice, creating the famous “bamboo tube fragrant rice.” If lean pork is mixed with fragrant glutinous rice and an appropriate amount of salt, then roasted in the bamboo tube to make fragrant sticky rice, it gives off an incredibly aromatic fragrance and serves as a luxurious delicacy for entertaining honored guests.

  Ingredients:

500 grams of rice, an appropriate amount of large moso bamboo.

  Preparation Method:

Cut the large moso bamboo into tubes with nodes at both ends, poke a hole in one end, rinse it, and pour out the water. Then add rice and water (with a ratio of 1:1.5 for rice to water)—don’t fill it too full, leave a 5 cm gap—and seal the bamboo tube opening tightly with bamboo leaves. Stack three stones to form a makeshift stove, place the bamboo tube on the stove at an angle (opening facing upward), then use tree branches to roast the fire, turning the bamboo tube occasionally to ensure even heating. Once the bamboo tube is mostly charred, the bamboo tube rice is ready. To serve, gently break open the bamboo tube with a hatchet, scoop the rice into a “bowl” folded from bamboo leaves, and enjoy with preserved meats, preserved fish, or pickled chili peppers that you bring along.

Additional Note: “Cooking rice in bamboo tubes” is a common cooking method used by mountain dwellers when they go up the mountain to chop wood, go to market, or go hunting. Its advantages include not needing to carry cookware, ease of preparation, a unique cooking technique, and a rich and distinctive flavor.
