Big Meat Ginger

Big Meat Ginger is primarily grown in Tubo Township of Liuzhou, and in Longmei, Chongmai, and Dapu areas of Liucheng. With a long cultivation history, the planting area exceeds 4,000 mu, yielding an annual production of 6 to 8 million kilograms. The ideal time to plant Big Meat Ginger is around the Qingming Festival in March, and harvesting can be done from mid-August to December based on varying culinary and processing needs. The sprouts are purplish-red, the skin is yellow, and the rhizomes are loosely arranged. The flesh is yellowish-white, with individual plants weighing 1–2 kilograms, and up to a maximum of 2.5 kilograms. The growth period ranges from 180 to 270 days. The plant thrives in high temperatures but dislikes cold weather and strong sunlight, preferring cool, moist environments. It has strong tillering ability, typically producing 16–20 shoots per plant. The flesh is tender and plump, with a distinctive spicy and fragrant flavor, making it an essential seasoning in home cooking. It is relatively resistant to storage and suitable for various forms of processing—such as dried ginger, ginger powder, ginger juice, ginger wine, candied ginger, and ginger in sauces—offering benefits such as improving digestion, dispelling cold, and inducing perspiration.
