Hakka Stir-Fried Stuffed Trio
Hakka cuisine offers a wide variety of dishes, among which the most representative are the stuffed-style dishes—where minced meat is stuffed into various ingredients and then pan-fried (or braised) until cooked. One of the most iconic examples is the Stir-Fried Stuffed Trio, which consists of stuffed bitter melon, stuffed chili peppers, and stuffed eggplant.
The process of making this dish is as follows: first, finely chop the pork, beef, and fish, then mix them with seasonings. Next, cut the eggplant into a "double-fly" shape, being careful not to completely sever the middle cut—leave a small hinge. Slice the chili peppers diagonally and remove the seeds. Cut the bitter melon diagonally into segments about 3 cm long and scoop out the cores. Then, stuff the prepared meat mixture into each of the three ingredients. Pan-fry the stuffed bitter melon until golden brown on both sides, which takes about 8 minutes. For the eggplant, deep-frying yields the best tender and crispy texture. The chili peppers only need a light fry.
The finished Stir-Fried Stuffed Trio is vibrant in color and delightful in flavor, sure to whet your appetite. The stuffed bitter melon has a mildly bitter yet fragrant taste; it not only helps clear heat, detoxify, improve eyesight, reduce internal heat, and stimulate digestion but also warms the stomach and boosts energy. Chili pepper lovers shouldn’t miss the stuffed chili peppers—it combines the savory taste of meat with the subtle aroma of chili, offering the best of both worlds. The stuffed eggplant resembles a Chinese hamburger, with meat sandwiched between two eggplant halves, and it has a very pleasing texture.
