Daping Yuba
Daping Yuba is a soybean product and a green food item, one of the specialty products of Daping Yao Ethnic Township in Pinggui Management Area, renowned both within and outside the region. Processing yuba is a traditional craft among Daping farmers, practiced in villages across the area. Daping Yuba is made using traditional methods such as grinding mountain-grown soybeans with a stone mill, boiling the slurry in cast-iron pots, and then naturally air-drying the product on slopes. It boasts a traditional flavor, is sweet, fragrant, crispy and delicious, and has excellent resistance to overcooking (keeping the soup clear). The color is a light yellow. Soybeans are rich in high-quality proteins, containing over 17 types of amino acids, about 20% fat, and abundant mineral elements (such as Ca, Mg, P, K) and trace elements (such as Fe, Mn, Zn, Se, etc.), along with comprehensive and rich vitamins. Therefore, yuba is highly nutritious. The main varieties of Daping Yuba are round stick yuba and pulp stick yuba, with the products mainly sold to Guangdong, Hunan, Hezhou, Nanning, and Liuzhou. Currently, Daping has over 200 family workshop-style processing households and five large processing plants, producing 600,000 kilograms of yuba annually. Due to the high market demand for yuba, the supply from Daping is far from meeting the market needs. As a result, there is tremendous potential for further developing Daping Yuba production.
