The tofu of Huangyao enjoys a far-reaching reputation. The great literary master Su Dongpo once praised it, saying: “With this on the table, why bother with chicken or pork?” Outside the ancient town, along the streets, are numerous rural snack shops. Each shop displays a signboard listing its signature dishes, with Huangyao tofu invariably among them. What sets Huangyao stuffed tofu apart is that it is shaped into small, individual parcels. The tofu cubes are mashed, mixed with half-fat, half-lean pork, and then formed into small bun-like shapes with no filling visible, all similar in size and shape. These are pan-fried in boiling oil until half-cooked, then removed and excess oil drained off before being simmered in a fermented black bean sauce until fully cooked.
Production Features
Huangyao features karst topography, with jagged, elegant limestone hills and clear flowing waters within the town. This naturally blessed landscape contributes to the uniquely sweet and clear quality of the local water. It is this well water that is used to soak soybeans, grind tofu, and cook the tofu, resulting in the delicious Huangyao stuffed tofu. The tofu cubes are thoroughly mashed into a paste, shaped into balls, stuffed, sealed, and then individually pan-fried in boiling oil until half-cooked. They are then removed and excess oil drained off. Later, they go back into the pan, simmered in a fermented black bean sauce until tender – and this is authentic Huangyao stuffed tofu. The flavor thoroughly permeates the tofu, with an inviting aroma and perfect balance of color, aroma, and taste, offering a unique culinary experience. The secret? It lies in the uniquely sweet, clear, and delicious water drawn from the ancient wells of the millennia-old Huangyao Ancient Town, which creates this exquisite texture.
