Xingning Sashimi
Xingning Sashimi
Similar to Wuhua sashimi, but with slight differences in preparation and serving methods—among which Daping sashimi is considered the finest. Fresh fish is descaled, cut open to drain blood, then gutted and boned before being sliced. The slices are thicker than those of Wuhua sashimi. The fish slices are served on a bamboo sieve, seasoned with high-mountain tea oil.
