Horsehide Puffball
Horsehide Puffball
An underground truffle-like fungus that resembles a potato in shape. It is found across eastern, central, southern, and western Yunnan. Its skin is especially well-suited for making soup, lending a uniquely peculiar flavor. When a mature whole puffball is roasted over hot coals, 0, the resulting aroma is overwhelmingly fragrant. Some people peel off the outer skin and eat the surface flesh raw, describing the texture as sticky, tender, and slightly crunchy — a truly interesting experience.
