“Hezifan,” also known as “Hezefan,” is a common dinner dish in the folk cuisine of Wuxiang. The main ingredients include millet or a small amount of corn grits. Seasonal ingredients are selected according to the season, including legumes (large white beans, large green beans, soybeans), vegetables (sweet potatoes, potatoes, pumpkins, winter squash, fresh green beans, carrots, white radishes, celery, sugar beets, dried green beans, pumpkin strips), and wild greens (bitter leaf, millet greens). The variety can be more or less, and the quantities can be adjusted based on personal preference — just take what you like and keep it moderate. Seasonings typically include chopped scallions, sliced garlic, salt, cooking oil, and vinegar, which are stir-fried in the pot.
