Pickled Vegetable Black Noodles
Pickled Vegetable Black Noodles, also known locally as Pickled Mustard Green Black Noodles, is a local delicacy of Jincheng. In the old days, due to a shortage of white flour in the area, people mixed white flour with sorghum flour to make noodles as a way to vary their diet. With Jincheng being famous for its well-pickled vegetables, the dish is served with a pickled vegetable sauce paired with the black noodles. It is sprinkled with coriander, sesame, and can also be topped with chili. The taste is richly sour, fragrant, and spicy, and the unique aroma of sorghum flour surpasses that of refined rice and white flour, making it increasingly enjoyable and more flavorful the more you eat. Over time, it has become a popular local dish among the people of Jincheng.
