Enping Wild Vegetable Feast
Famous local dishes in Enping include deep-fried fermented black bean fish, spiny amaranth soup, stone frog rice, and free-range chicken. These dishes use simple ingredients but are incredibly flavorful. The fish are found in the mountain streams of Enping’s deep hills. What makes them unique is that they stop growing once they reach the length of a finger. Raised in mountain stream water, these fish are exceptionally sweet and delicious. When deep-fried and served with plain congee or rice, they are wonderfully fragrant and tasty.
