"Like an egg without a yolk, like a sweet rice ball without sugar" — this is how people praise the famous local delicacy from Ansang in Changde, Hunan — multi-flavored fish balls. Located by Lake Dongting, Ansang is known as a land of fish and rice, producing a wide variety of fish in great abundance. The locals have developed numerous ways to enjoy fish, and fish balls rank among the most distinctive. The art of making fish balls in Ansang boasts a long history. As early as the Ming and Qing dynasties, fish ball dishes were already served at banquets. A popular saying in Ansang goes, "If you don’t serve fish or meat balls when entertaining guests, even a full twelve-course meal won’t be appreciated." In those days, renowned eateries such as Yuhuatai and Lechunyuan in Ansang were famous far and wide for their fish balls, attracting guests from near and far. There are various methods of making Ansang fish balls, both by hand and by machine. The resulting fish balls can be sweet, salty, or spicy. Recently, the Ansang Canned Food Factory, building on traditional recipes, has created a new variety — multi-flavored fish balls. These draw on the strengths of various domestic producers, pioneering a new approach to processing freshwater fish products in China and filling a domestic gap. The canned version made from these fish balls is exported both domestically and internationally, becoming a key project in the development of Changde’s food industry. Multi-flavored fish balls use premium fish such as yellowcheek carp, topmouth culter, and silver carp as their main ingredients. During production, fish of roughly similar size are cleaned to remove scales and innards, then go through processes including slicing, deboning, mincing, seasoning, mixing, shaping, deep-frying, and sterilizing. The finished fish balls are uniform in size, visually appealing, and golden in color. A rich assortment of seasonings is added, including monosodium glutamate, starch, wine, chili oil, white sugar, pepper, and more. With one bite, you’re greeted with a burst of aroma and a symphony of flavors — delicious and savory. When made into canned products, they are convenient to eat, easy to carry, and have a long shelf life. They can also be served cold in salads, braised, or added to soups, making them a fine delicacy fit for any banquet. Since their introduction, multi-flavored fish balls have gained increasing favor among consumers. (Changde)
