Dong'an Chicken
Dong'an Chicken is one of Hunan's traditional famous dishes. It can be found in almost every Hunan cuisine restaurant across China. Overseas, in some Chinese restaurants in Canada and the United States in North America, Dong'an Chicken and beef tripe are among the representative Chinese dishes. As long as it is a Hunan cuisine restaurant, Dong'an Chicken will definitely be available.
Preparation:
(1) Boil the whole chicken, which has been plucked, gutted, and processed, for a short while until a chopstick can be inserted.
(2) Remove the chicken and let it cool, then press down with your hand and cut downward. The pieces are generally larger so that they can be reassembled into the shape of a chicken after cutting.
(3) Pour in the prepared chicken broth seasoned with vinegar, ginger, chili, and salt. Cover with a large bowl and pour the broth over repeatedly several times until the seasonings have basically penetrated the chicken meat.
Features: Delicious and colorful, tender and soft, rich but not greasy, fragrant but not heavy, tender but not mushy, crispy but not tough, with a well-balanced sour and spicy taste that stimulates the appetite and produces saliva.
