Yuanling Shailan
Yuanling Shailan (Yuanling)
Shailan is a traditional specialty food from Yuanling, Hunan, the birthplace of China’s traditional dragon boat culture. With a history of over 300 years dating back to the late Ming and early Qing dynasties, Shailan is made from high-quality fresh pork hind leg. The meat is trimmed, sliced, and marinated with natural seasonings such as salt, cooking wine, sugar, and Sichuan peppercorn for a period of time. It is then smoked over smokeless charcoal. The finished product has a glossy reddish hue, emits a richly fragrant aroma, and leaves a lingering aftertaste. It is a premium delicacy favored by locals for meals, drinking, and as a gift for family visits or friends.
Making Yuanling Shailan
Made from the hind leg of locally raised black mountain pigs in Yuanling, the meat is deboned, skinned, defatted, and tendon-free. It undergoes over ten meticulous processing steps using a unique blend of ingredients. Free from preservatives, it has a long shelf life and is rich in nutrition, high in protein, and low in fat. It can be steamed, stir-fried, deep-fried, grilled, or boiled, making it a delicious dish suitable for all ages and an excellent choice for gifts.
