Yuanling Dengzhanwo
Dengzhanwo: A breakfast item and everyday snack for people in Yuanling. It can be found everywhere in Yuanling markets. The preparation involves first grinding glutinous rice into a batter, which is then spread as a base layer in a specially designed dengzhanwo utensil. A mixture of fillings—such as yellow chili peppers, tofu, dried shrimp, pickled vegetables, shredded pork, shredded radish—is added on top, followed by another layer of batter to cover, then it is deep-fried until golden brown and ready to eat. It has a delicious taste that is crispy, savory, salty, and spicy all at once, leaving a memorable aftertaste. It gets its name because the utensil resembles an old-style tung oil lamp.
