Drunken Flower Pork from Central Hunan

Long-snouted, short-haired, streaked with fat, it loves to graze on tender mountain shoots.

Thirsty, it drinks from cool springs and dewy banana leaves; hungry, it feasts on rice, sweet potatoes, and wine lees.

When served fresh and red, it graces golden platters; when fragrant and tender, it invites jade chopsticks.

Its intoxicating flavor embodies the true spirit of the people of Hunan, with the commander’s banner flying high over Nanjing.

This poem recounts a legend from over a hundred years ago about Drunken Flower Pork from Central Hunan. It is said that Zeng Guofan, the commander of the Xiang Army, led a frugal life but had a particular fondness for the pork from his hometown. During festivals and banquets, the table might lack delicacies from land and sea, but it could never be without a dish of Drunken Flower Pork. When the Xiang Army and the Taiping Army reached a prolonged stalemate in Nanjing, with the city proving difficult to take, the soldiers—far from home for too long—began to lose their fighting spirit. Zeng Guofan, anxious and unable to enjoy his meals, suddenly thought of the Drunken Flower Pork from his homeland. Struck by inspiration, he immediately sent men back to purchase 300 Drunken Flower Pigs. As the soldiers drank the local brew and savored the long-missed Drunken Flower Pork, their morale soared, and they successfully planted the Xiang Army’s flag atop the walls of Nanjing.

Drunken Flower Pork from Central Hunan has nearly 300 years of breeding tradition. The breed originated from a cross between local pigs and wild boars. They have long snouts, large bellies, thin ears, sparse hair, shiny coats—either black-and-white or fiery brownish-red. The people of Central Hunan love their liquor, and almost every household brews their own year-round, especially the locally made glutinous rice wine known as Central Hunan Water Wine. This wine is renowned across the region for its crisp, mellow taste and lingering aftereffect. The leftover wine lees are a favorite of the local flower pigs. When mixed into their feed—cooked grains and vegetable leaves enhanced with just the right amount of wine lees—the pigs’ appetites are instantly whetted. Many farmers even add small amounts of the liquor directly to the feed during the crucial fattening stage of the pigs. Though the science behind this practice is unclear, the tradition has endured.

The landscape of Central Hunan is picturesque, with clear waters and lush grasslands, providing an ideal natural environment for the growth of Drunken Flower Pigs. This has also shaped their semi-fenced, semi-grazing lifestyle. They freely forage for wild grasses and shoots amidst the mountains and streams, drink from crystal-clear, sweet mountain springs, and enjoy feed carefully prepared with wine lees. This unique environment and feeding regimen produce the exceptional quality of Drunken Flower Pork. Compared to ordinary pork, Drunken Flower Pork is more tender, richer in flavor, and boasts vibrant color and aroma when cooked, with no off-putting smell. Popular sayings such as “Nothing beats Drunken Flower Pork” and “No New Year’s feast is complete without Drunken Flower Pork” reflect the enduring affection of the people of Central Hunan for this delicacy.

In recent years, the superior quality of Drunken Flower Pork has drawn significant interest from many domestic livestock experts. Research teams led by Peng Yinglin, the chief expert of Hunan Province’s Swine Industry Technology System, and Xia Yanbin, former dean of the Food Science and Technology College at Hunan Agricultural University, conducted systematic tests on the carcass and meat quality of Drunken Flower Pigs. The results showed that Drunken Flower Pork significantly outperforms common pig breeds in terms of nutrition and flavor. Its meat is tender and bright red, with fine muscle fibers, rich intramuscular fat, high levels of flavorful amino acids and unsaturated fatty acids, making it a rare premium breed in China.

After nearly two years of observation and analysis, experts uncovered the secret behind the delicious aroma and taste of Drunken Flower Pork. In addition to its natural habitat and wild boar genetics, the unique feeding method plays a crucial role in shaping its quality. Studies show that moderate feeding of wine lees helps break down and transform anti-nutritional molecules found in plants, animals, and minerals, increasing the pork’s unsaturated acid content while reducing cholesterol. Meanwhile, the wine contains 18 types of amino acids, as well as various trace elements like magnesium, selenium, zinc, and B vitamins, which can stimulate appetite, improve circulation, and enrich the pork with additional nutrients and flavor compounds such as linoleic acid and vitamin E.

As a gem of traditional Central Hunan cuisine, Drunken Flower Pork has not expanded into a large population over its more than 300-year history due to its long growth cycle, high breeding costs, and relatively demanding environmental and dietary requirements. It survives only in small pockets around Yangjiatan, Fengping, and Hetang in Lianyuan City—historic strongholds of the Xiang Army. Determined to revive and grow the Drunken Flower Pork industry, Hunan Huade Food Group partnered with the Hunan Academy of Animal Husbandry and Veterinary Science to build dedicated Drunken Flower bases and establish the Drunken Flower brand. After more than two years of dedicated effort, they developed a breeding base capable of producing 10,000 pigs annually, with plans to scale up to 50,000 pigs per year within the next three years. By integrating modern scientific management methods with traditional practices, they ensure scientific preservation of the breed, precise feed formulation, controlled grazing, and effective disease prevention. A comprehensive, traceable electronic ID system has been established to maintain clear, transparent records of every pig—from birth and nursing, through fattening, to market.

In 2014, during the prestigious Hunan Provincial Games, Huade Drunken Flower Pork was selected as the exclusive pork product, earning high praise from the athletes. Upholding tradition while forging ahead, Drunken Flower Pork from Central Hunan is gaining recognition and admiration for its premium quality. It is reclaiming its place as a symbol of culinary excellence, expanding into broader markets.
