Jade Dumplings

Jade Dumplings are a signature dish of the Supply and Marketing Hotel, made with premium minced meat and seasonal vegetables. They feature thin wrappers, generous fillings, a vibrant jade green color, and a delicious taste.

Ingredients: 600g flour, 400g pork, 600g greens, chopped scallions and ginger, salt, MSG, soy sauce, sugar, chili oil, sesame oil, and a suitable amount of alkaline flour.

  Method

  (1) Wash the greens. Place the leaves in a basin, add salt, and mash them into a paste using a rolling pin. Squeeze out the green juice and clarify it with a small amount of alkaline powder. Briefly blanch the stems in boiling water, then chop and squeeze dry on a cutting board. Mince the pork and place it in a basin. Add a small amount of water, salt, MSG, scallions, ginger, soy sauce, sugar, chili oil, and sesame oil. Mix well and beat until the mixture becomes elastic. Finally, add the chopped cabbage and mix evenly to form the dumpling filling.

  (2) Place the flour in a basin. Add salt, warm water, and the green juice, then mix well. Knead into a green dough, cover with a cloth for a while, then place on a cutting board and roll into a long strip. Cut into 60 small pieces, roll each into a small round wrapper, add the filling, and fold into dumplings.

  (3) Bring water to a boil, add the dumplings, and when the water boils again, add cold water 2–3 times. Cook until done, then remove and serve on a plate.
