Sishui Honey
Sishui Honey is a geographical indication certification trademark.
Sishui Honey is a specialty of Sishui County in Jining, Shandong Province.
Honey is produced by bees from the nectar of flowering plants, which they process and store in their hives. Bees collect nectar or secretions with a moisture content of about 75% from the flowers of plants, store it in their second stomach, and after about 15 days of repeated processing, various vitamins, minerals, and amino acids reach certain levels. At the same time, the polysaccharides in the nectar are converted into monosaccharides—glucose and fructose—that can be directly absorbed by the human body. The moisture content is reduced to less than 23% before it is stored in the honeycomb cells and sealed with beeswax. Honey is a supersaturated solution of sugar, and at low temperatures, it crystallizes. The part that crystallizes is glucose, while the non-crystallized part mainly consists of fructose.
