Stir-fried Rice Noodles, Gao'an Style
Ingredients: Fresh rice noodles, shredded meat, seasonal vegetables, red chili peppers, minced ginger, minced garlic, chopped scallions
Seasonings: Salt, sugar, MSG, soy sauce, ground pepper
Preparation:
1. Heat oil in a wok. First stir-fry the shredded meat, then add minced ginger and garlic to release the aroma. Next, add the seasonal vegetables and red chili peppers, season with salt and sugar, and stir-fry.
2. Add the rice noodles to the wok and stir until they are separated and loosened. Pour in soy sauce and a little water. Once the noodles are evenly coated and become soft and smooth, season with MSG and ground pepper. Remove from heat and sprinkle with chopped scallions before serving.
Note: Dried rice noodles can also be used for this dish. Soak them in water to soften before cooking. When stir-frying, add a bit more water and simmer for a short while.
