The Yuanzhou Pineflower Preserved Eggs, a traditional and renowned local specialty of Yichun with a long history, are crystal clear. The egg whites are purple-red or tea-clear in color, adorned with pineflower patterns; the egg yolks are semi-solid. When cut horizontally, five concentric rings of colors can be seen from the inside out: sky blue, light yellow, deep blue, gray-black, and tea green. After the founding of the People’s Republic of China, lead-free pineflower preserved eggs were successfully developed through research, winning widespread acclaim from customers both at home and abroad. They have successively been awarded the titles of Quality Product by the Ministry of Commerce of China and Jiangxi Province. (Yichun)

The Yuanzhou Pineflower Preserved Eggs are a premium local specialty of Yuanzhou District and one of the “Three Treasures of Yuanzhou,” with a long history. According to the Yichun City Annals, the Yuanzhou Pineflower Preserved Eggs originated during the Tang and Song dynasties, flourished in the Ming and Qing dynasties, and had already gained fame both domestically and internationally during the Republican era.

Due to its unique production technique, the Yuanzhou Pineflower Preserved Eggs boast a bright and crystal-clear appearance. Especially because the eggs are wrapped with ash made from burning pine and cypress branches and leaves, the surface displays various sizes of pineflower patterns, hence the name “Pineflower Preserved Eggs.” They resemble snowflakes—exquisite, translucent, and pure white like jade—and leave a cool, sweet aftertaste. Legend has it that Empress Dowager Cixi once praised the Yuanzhou Pineflower Preserved Eggs highly after tasting them. In her delight, she personally inscribed the characters “Yichun” (宜春), which are now preserved in an inscribed stone tablet housed in Chuntai Park.

Traditional pineflower preserved eggs were made by wrapping fresh eggs with yellow mud mixed with oxidants. Through continuous innovation and reform by processing artisans over generations, lead-free zinc-enriched pineflower preserved eggs have now been developed. The yolk and white are distinctly layered, showing five colors from the inside out: red, bean yellow, bean green, dark gray, and tea red. The yolk is semi-solid, cohesive yet not runny. The eggs are rich in amino acids as well as essential nutrients such as copper, iron, and zinc. They have a delicious and mellow taste, leaving a cool, sweet sensation with a long-lasting aftertaste. These eggs preserve the unique flavor and beautiful pineflower patterns of traditional preserved eggs, while also offering the benefit of cooling and moistening the lungs. Tested by the Wuhan-based Agricultural Ministry Food Quality Supervision and Testing Center and health authorities, and evaluated by experts from the China Animal Products Processing Research Society, the lead-free zinc-enriched pineflower preserved eggs meet the national standard GB9694-88 processing criteria and have been recommended as a branded product by the China Animal Products Processing Research Society.

The processing procedure of Yuanzhou Pineflower Preserved Eggs mainly includes: ingredient preparation → placing fresh eggs in jars and adding the mixture → technical management, maturation, and removal from jars → inspection and grading → packaging, sterilization, and storage. The processing method involves mixing several substances—including sodium carbonate, quicklime, salt, tea leaves, plant ash, and water—in specific proportions. Duck eggs are then placed in this mixture and undergo a series of changes in protein and yolk under controlled temperature and time to become preserved eggs. The transformation of fresh eggs into preserved eggs results from the interaction of these materials, and the quality of the materials directly affects the final product. Therefore, the production technique of Yuanzhou Pineflower Preserved Eggs strictly selects materials according to the requirements of preserved egg processing and green food standards to ensure the hygiene and health benefits of the final product. Due to differences in local materials such as lime, tea leaves, and water quality in Yuanzhou compared to other regions, the resulting preserved eggs have their own unique flavor.

The Yuanzhou Pineflower Preserved Eggs enjoy fame both domestically and internationally. Especially after the reform and opening-up, the industry saw significant development, with processing enterprises flourishing. In addition to meeting domestic demand, the product is also exported for foreign exchange earnings. It has been certified as a green product by the National Green Development Center and has been repeatedly recognized as a provincial and ministerial-level quality product.

In June 2010, with the approval of the Jiangxi Provincial People’s Government, the production technique of Yuanzhou Pineflower Preserved Eggs was included in the third batch of Jiangxi Provincial Intangible Cultural Heritage.
